Ahi Tuna Tartare Tower
Dice separately salmon, tuna and avocados. Combine onions with avocados. Use a quart tin mold like a Roma tomato paste can, open at both ends. Gently layer mold starting with layer of tuna, avocado, and salmon. Chill in refrigerator for at least one hour. To serve, unmold on a plate and pour dressing over tower.

Butterfish with Ginger Sauce

Crab Meat in Daikon Wrap
Combine the crab meat, mayonnaise, minced chives, salt and pepper in a bowl. With a mandoline or slicer, cut the daikon into thin circles. Place 1 teaspoon of the crab mixture onto each daikon circle. Fold in half. Loop one chive or green onion top around the folded daikon and tie into a knot.
