Calm and Corn Chowder
Ingredients :
  • 50g butter
  • 1 garlic clove (minced)
  • 2 lean bacon (coarsely chopped)
  • 1 chopped onion
  • 225g clam meat
  • 255g corn kernels
  • 225g potatoes (diced)
  • 3 tbps flour
  • 1 cup white wine
  • 3 cups chicken soup
  • 1 cup fresh cream
  • salt and pepper to taste
  • 1tsp finely chopped fresh parsley
Preparation :
  1. Melt butter, add the garlic and bacon until crispy, add the clam meat and all the vegetables, cook until fragrant and soft.

  2. Sprinkle in the flour and stir well.

  3. Pour in white wine and chicken soup and bring to boil, then reduce to simmer for 15 minutes.

  4. Add cream and mix well, season with salt and pepper.

  5. Reheat the soup and garnish with parsley. Serve hot.
Suggest using canned clam meat or simply steaming double amount of live clams for the meat.
