Apple Wine Glazed Squab
Ingredients
Ingredients :
  • 1 large size fresh squab
  • salt and black pepper to season
  • 1 tsp minced ginger
  • 1 tbsp Japanese dark soy sauce
  • 1/4 cup apple wine
  • 1 tbsp Hoi Sin sauce
  • 1 tsp sugar
  • 1 tsp Japanese soy sauce
  • 1 tbsp oil
Preparation :
  1. Rub the squab with salt and black pepper.

  2. Mince the ginger.

  3. Spread the ginger and soy sauce over the bird, then rest for 30 minutes.

  4. Heat 1 tbsp oil in a fry pan.

  5. Sear the squab until golden brown and crispy.

  6. Roast at 230 oC oven for 10-15 minutes, let rest for 10 minutes.

  7. Cut the squab in half, then dish up.

  8. Bring the reserve the marinade to boil.

  9. Pour in apple wine until 2/3 full, stir in Hoi Sin sauce, sugar and soy sauce and cook until thick.

  10. Serve with the squab.
Tips
Japanese Soy Sauce can be replaced by Chinese dark soy sauce.
