Duck Breast with Red Wine Sauce
Ingredients :
  • 300-400g frozen duck breast
  • salt and pepper to season
  • 1 clove shallot (minced)
  • 1/2 cup red wine
  • 1/2 Oxo cube
  • 1/2 cup hot water
  • salt and pepper to taste
Ingredients :
  1. Score the skin of the duck breast with a sharp knife, salt and pepper to season.

  2. Heat 1 tbsp olive oil, brown the duck breast with the skin side first, about 1-2 minutes on each side.

  3. Place the duck breast on a baking sheet.

  4. Bake at 200 oC oven for 10 minutes until medium well.

  5. Rest for 5 minutes.

  6. Drain offf the excess grease.

  7. Use the same pan to saute the shallot, pour in the red wine and bring to boil.

  8. Add the Oxo and hot water, reduce to 1/3 of the portion, and season.

  9. Slice the duck breast, arrange nicely on a paste.

  10. Pour over the red wine sauce and serve.
Score the skin with a sharp knife before pan-frying the duck breast, for crispier texture and a nice golden brown color.
